2020 VENN Carbonic Merlot
This wine was inspired by years of drinking Cru Beaujolais and wanting to better understand the technique. After making a visit to Morgon at the start of 2018 and collecting notes from winemaker heroes there and in our own backyard, we worked to uncover the vibrancy in our own Merlot.

Method: A continued exploration of intracellular fermentation possibilities: whole clusters are sealed in a stainless steel tank for 15 days of carbonic maceration, after which we tread them by foot to allow primary fermentation to finish. Nine months in neutral French oak. Minimal SO2. No fining or filtration.
